Larger items like turkeys or hams can be smoked as well by simply making an aluminum foil tent to cover the item when you cook it, instead of using the Smoker lid.

 APPLE: The flavor is more complex than alder, yet it is still quite mild. Excellent for game, fish, and poultry.

Step 1 : Place the wood chips in a small pile in the center of the Smoker Base


Step 2: Place Drip Tray on top of wood chips inside the Smoker Base.
Note: Spraying the Tray with non-stick vegetable spray or placing a sheet of aluminum foil on it, makes for an even easier clean-up.

Step 3: Place the Wire Rack on top of the Drip Tray then arrange the food to be hot-smoked on the Wire Rack. Note: Spraying the Rack with non-stick vegetable spray makes for an easier clean-up.

Step 4: Slide the Lid closed and place the entire unit on the heat source. Medium heat settings generally yield the best results.
